Avocado Chocolate Chip Cookies

Talk about delicious!! No joke!

Who knew that there was such a thing as “healthy cookies”!? But there is! I was a little skeptical about making these for fear they wouldn’t be as good as the pictures make them look. BUT I was pleasantly surprised and I think you will be too 🙂 So easy and simple to make.

Leave me a comment below if you make these and let me know how they turned out for you 🙂

3/4 cup avocado (super ripe, BUT not brown)
1/2 cup coconut sugar or honey (your choice)
1 egg
1/2 cocoa powder (dark or milk chocolate, again, your choice)
1/2 cup dark chocolate chunks
1/2 tsp of baking soda

  1. Preheat oven to 175°C / 350° F.
  2. In a bowl using a hand mixer (or make everything in a food processor), mix together avocado and coconut sugar until smooth. Add in the egg.
  3. Mix in the cocoa powder and baking soda.
  4. Stir in chocolate chunks.
  5. Using two spoons place dollops of cookie dough in a baking sheet with parchment paper. The cookie won’t spread as much as usual cookies when baking, so make sure to flatten them out a bit with the back of the spoon.
  6. Bake for 8-10 minutes or until the cookies don’t stick as much to the paper as they did before baking.
  7. Cool down. Store in an airtight container in the fridge.

Healthy Avocado Chocolate Chip Cookies

Note: These cookies are wayyy bomb when cold! You can also substitute the sugar (or honey) for a whole banana. I do recommend if you are using a banana, don’t us a huge one and you will have to bake them a little bit longer. And to avoid chunks of banana, use the food processor method. ALSO, you can put other things in them as well, like peanut butter cups, mint, regular chocolate chips, peppermint, etc.

If you do try one of the different ways, I would love to hear what you did and if they were superrr delicious or not 😀
